In the past hey could be taught to take small children faithfully to school and back every day, never deviating from the path. The child didn't need a saddle or a bridle, the horse knew the way. Cows will also line up and "put themselves to bed" at sundown in the barn, even if the farmer isn't there. A farm runs on routine, and the animals will keep it.
